Fruity Quinoa

My favorite dish at Saffron is Pineapple Fried Rice. Obviously, it's fried rice with pineapple, but also green onions, cashews and carrots. (Saffron is a Thai-Asian type of restaurant, serving fried rices and noodle dishes, curries and sushi.)

After the recent Mango Rice recipe, I decided to switch it up a little and mimic the Pineapple Fried Rice flavors. Instead of rice, I used quinoa. Instead of mango I used 1/4 of a pineapple.

Even the Hubs likes it, and he isn't one for vegetarian entrees.

Fruity Quinoa

1 cup of quinoa, rinsed and then cooked in 2 c water
2 scallions, white parts only, sliced
1 large carrot, diced
handful of cilantro, chopped
1/4 of a pineapple, diced
2 oranges, peeled, pulled apart and cut into halves or thirds
3 jalapenos, seeded and diced
1/2 - 3/4 c roasted, salted peanuts
About 1 Tbsp olive oil

Start the quinoa cooking. (I microwaved it in a rice cooker for 3 sets of five minutes, stirring after each set.)

In the meantime, prep the rest of the ingredients. When the quinoa is finished, mix in the remaining ingredients. It can be served as is, but I prefer to warm it all up together. This is one of those dishes that the flavors get better with time in the fridge.
